In this case they seemed so self-evident that not mentioning them seems dishonest. It's a question of differing lifestyle expectations. Do you happen to know if they're open at lunchtime, and what the deal is then?<br /><br />Also, there's an interesting piece in Le Monde's gastronomy hors-série (an awesome read cover to cover) about foreign chefs, if you haven't seen it.<br /><br />It mentions Japanese cooks and "leur rigueur, leur précision et leur assiduité au travail".
