ponzu scheme: tsubame, ito izakaya, peco peco, 75009
I'm a bit late in discussing the tsunami of twee Japanese concepts that arrived on my doorstep in the 9ème over the course of last year.
I like Japanese cuisine as much as anyone - indeed, I assume I'm genetically inclined towards it - and Ito Izakaya, Peco Peco, and Tsubame all make a point of serving natural and organic wines, which, until recently, have functioned as a useful indicator of conscious restaurateurism in Paris and beyond.
But these restaurant openings mark the discomfiting moment that a natural-by-numbers wine list became a feature of contemporary Parisian décor, like Tsubame's blackboard, or the hideous scratchy DIY cardboard table in Ito's rear room. Within the context of a Japanese restaurant in Paris, a natural-by-numbers wine list is, perversely, a sign of inauthenticity, an indicator that one is sitting in a Parisian Japanese concept, rather than an unselfconscious Japanese restaurant. Whether there is really anything wrong with that will depend on the rigor of one's aesthetic demands, and whether it is lunchtime.

n.d.p. in burgundy: domaine guy roulot, meursault
Years ago, at a fine-dining Italian restaurant where we both worked, I happened to ask a sommelier friend how he'd typify Meursault. At this restaurant on the wine team we spent a fair amount of time daydreaming about all the French wine we didn't interact with. My friend replied that among white Burgundies Meursault was known for being pretty generous, buttery, appley, sometimes lightly mealy...
The description has held up fairly well. But it's funny how loosely it applies some of the most acclaimed stuff. Case in point was a visit my friend J and I made recently to legendary Meursault estate Domaine Guy Roulot, whose wines are perhaps so celebrated for how they tend to transcend the hallmarks of the appellation.

ah seaux desu ka: thursdays at les trois seaux, 75011
My friend Olivier Aubert's 11ème bistro-à-vin Les Trois Seaux is now offering wines at prix caviste on Thursdays. This is a particularly fine bargain at Les Trois Seaux, where ordinarily the restaurant mark-up of twice retail constitutes the only teensy sticking point* in an otherwise totally charming meal.
In fact, having posted about the restaurant when it was under construction, and then later when it was freshly opened, I can attest that the place seems to be really hitting its stride these days.
The other night I popped by with my friends C, P, E, J, and IF, thinking only to nibble on charcuterie and basically exploit the new Thursday thing to the fullest. But, since I have no willpower and all my friends are enablers, we wound up having a remarkably superb three-course meal, one accompanied by a wine list that, on Thursdays at least, presents a fine opportunity to explore the wines of Bordeaux without breaking the bank, or being a banker.
