somm-run: le siffleur de ballons, 75012
If coverage of some of my favorite Paris addresses is long overdue, it's usually because I inadvertently befriended the staff and / or ownership before I had a chance to write anything. It's hard to write about one's friends. One either gushes aimlessly, or, if one is me, one tosses, underhand, a few critical softballs, and soon loses friends. Often it doesn't seem worth the risk. What, one asks oneself, do I get out of this ?
I'm still trying to figure that out. This blog is approaching its 500th post, which, when you think about it, is a lot of booze. A lot of sacrificed lunchbreaks, a lot of aimless travel, and above all, a lot of unsolicited opinions. As with most commitments in life, I'll probably never stop thinking of ending it all.
But I'll take advantage of the valedictory humour I'm in lately to say something about my friends at Le Siffleur de Ballons, Thierry Bruneau's pitch-perfect neighborhood wine bar on rue de Cîteaux, where I can be found at least once a week. For newsiness, I might add that since autumn the bar has offered splendid aged faux-filets to share, triaged over from Bruneau's other restaurant L'Ebauchoir across the street.

beyond izakaya: restaurant 6036, 75011
Last fall I helped my friends from 11ème arrondissement German bar Udo put together a small wine list for their new project, a gallery space and Japanese small-plates restaurant called Düo that opened in October.
If I haven't yet written about Düo, it's because I want to give the team there time to work out the service kinks before I start cheerleading about the place. I figured the concept was original enough - inexpensive Japanese small plates and solid natural wines - that buzz would build of its own accord.
I realised I may have waited too long when the other day, just a few blocks away from Düo, my friend E and I stumbled upon the newly-opened 6036, a SIM-card-sized restaurant serving - what else? - inexpensive Japanese small plates and solid natural wines. I guess it's a full-blown trend already. 6036 bills itself as izakaya, or Japanese bar food, but this is a ruse: it's actually a modest and sincere gastronomic experience, helmed by chef Haruka Casters, formerly sous-chef at 10ème arrondissement tasting-menu destination Abri.

killing it : restaurant bones, 75011
Good or bad, a meal never quite gets replicated, because too many variables are in play. Menus change, weather shifts, vintages turn, staff move on, tables break, bars get worn, hype evaporates - and so on. In Paris, where even basic hospitality remains touchingly uncommodified, restaurants are even more protean than the norm, with the quality of a meal often coming to depend overwhelmingly on whether one's server feels chipper on a given day. A critic's challenge is to arrive at conclusions that apply to more than one experience.
The most challenging subject, therefore, is a restaurant that unceasingly challenges itself. My friend James Henry's new-ish place Bones is one of these. Tucked on a side street off métro Voltaire, the northernmost border of the culinary renaissance currently occurring in the Faidherbe-Charonne area (Septime, Le Six Paul Bert, Rino, etc.), Bones was a barnstorming success from the get-go. I could have raved about the meal I had there back in January, a tour-de-force that crested with an unforgettable dessert of fresh almonds, coffee mousse, goat yogurt sorbet, and lemon. But had I done so I couldn't have reported simultaneously on the subsequent expansion of the bar menu far beyond pulled-pork sandwiches; the restaurant's brief flirtation with à la carte service; and the flourishing of its by-the-glass list, which bests most restaurants in Paris in both breadth and quality.
I also would have missed the steady improvement in Henry's bread-making skills. He has good reason to want his bread to succeed: as Americans are to scrambled eggs, so are the French to bread, a subject on which even the dullest nitwits feel entitled to nitpick. When one sits down to dine at Bones, one is treated to a hat trick of forcefully flavourful house-made products - charcuterie, butter, and the bread - that serve as a kind of clarion, a wake-up call to any guests who, perhaps on the basis of Bones' bare décor, were expecting a simple bistrot meal.

beyond compare : le mary celeste, 75003
Most comparisons of cities are offered as a way for the speaker - usually an inhabitant of the smaller or less lively of the two cities being compared - to make a display of worldliness and, in doing so, reassure him or herself of the wisdom of winding up in the smaller or less lively city. It's a human phenomenon, as common in Paris as in Boston and San Diego. One also hears it constantly from any New Yorker who has ever chosen to settle elsewhere.*
But, as Italo Calvino hints in his book Invisible Cities, in which narrator Marco Polo describes a seeming infinity of exotic metropolises that all turn out to be Venice, cities might more accurately be considered closed system unto themselves, incomprehensible to outsiders. Narrator Marco Polo's descriptions exceed the imagination his interpellator Kublai Khan, and indeed of the reader. It's impossible to accurately judge one city by the scale of another.
So far, the greatest benefit I've derived from this way of thinking is that it has permitted me to love Le Mary Celeste, an oyster bar some good friends recently opened in the Marais.
