conscientious objectors: les déserteurs, 75011
As diners and critics, we're willing to discern greater depths in a chef's plates if he or she has led a swashbuckling lifestyle, or at least can be presented to us as having witnessed the mysteries of foreign cultures. In contemporary Paris, the résumé spice du jour is "travel in Asia," a transcendant, cuisine-altering experience for chefs ranging from David Toutain to Saturne's Sven Chartier to Le Servan's Tatiana Levha. If, of that list, only Levha's cuisine shows any direct engagement with eastern cuisines, don't blame the chefs. Blame their publicists, and culinary media outlets.
Les Déserteurs, the upscale market-menu restaurant opened last year by chef Daniel Baratier and sommelier Alex Céret in the former Rino space on rue Trousseau, is, like its chef, deficient in narrative flair. The name is a witticism referring to the owners' former workplace, the untrendy Ile Saint Louis Michelin one-star Le Sergent Recruteur, a restaurant that I now read is in liquidation. When the joke passes, we're left with the following premise: Two Friendly French Guys Open Slightly Pricey Restaurant.
Diners will be forgiven for not leaping to book six-tops. I myself only went because they had a last minute table on a Saturday night, and I often work in the neighborhood. I was therefore caught entirely by surprise by the restaurant's outright excellence. From its pacing to its apportionment to its marvelous contents, a meal at Les Déserteurs is a tour de force of sensitivity, where the refined, vegetable-driven country cuisine is as nuanced and mature as the wine list.

never-ending terrace: les caves de reuilly, 75012
Remember that scene in Wayne's World, where Wayne and Garth do impressions of various US states, before being confounded by the unsatirizable dullness of Delaware?
I find the joke applies equally to Paris' 12ème arrondissement, a pancreas-shaped swathe of east Paris containing the marché d'Aligre, the Bois de Vincennes, and not much else. Between these two destinations, beneath the oft-overlooked Coulée Verte, lies a no-man's land of wide-laned roads and faceless residential blocks, as if the families lodging north of the Gare de Bercy tangle, faced with a choice between typical rail-side rat-commerce and nothing at all, chose the latter. Before last week, I'd only had reason to venture there once, in order to visit Au Trou Gascon, a well-priced one-star Michelin restaurant to whose Armagnac library I have, sadly, not since had the occasion (i.e. euros) to return.
Alarmingly, it now seems I may be back in the neighborhood rather often. My friend Mike Donahue - 12ème resident, fellow Philadelphian, and brew maestro behind Montreuil beer upstarts Deck & Donahue - recently introduced me to the re-vamped Les Caves de Reuilly, an august address for quality wine in Paris that seven months ago came under new ownership. The new owner, Pierre Le Nen, hails from Brittany, studied wine in Paris, and at some point in between, worked in the Vancouver and attained what is, in Paris, a rare fluency in both English and good hospitality. Under his direction, Caves de Reuilly maintains a balanced, mostly-natural wine selection and a vast, expandable terrace, where one can enjoy the former with zero corkage fee. For any Parisians feeling gipped about 2014's summerless August, Les Caves de Reuilly's terrace is a marvelous place to recoup.

neighborhood natural: les vinaigriers, 75010
Most would have you believe that every arrondissement of Paris contains several Great Neighborhood Restaurants. But such a belief is dependent upon the demands of the individual diner. My own criteria - which I don't consider too extravagant - are friendly service, bargain comfort food, and potable wine. Yet within this rubric, great Neighborhood Restaurants prove rarer than narwhals. Far too often I'm directed to ostenstibly solid establishments only to encounter pitifully undersketched beverage programs, as if honest wine in Paris were something we ought to cross town for on weekends.
With these elevated standards in mind, I'm happy to declare promising young canal-area bistrot Les Vinaigriers a splendid neighborhood restaurant. Owners Frédérique Doucin and Thibault Desplats are perceptibly new to the industry, but what they've created in a former auberge on a dreamboat real estate corner is a fine place for a wholesome and mostly unfussy weeknight meal. This summer it's set to be every canalside apero-sipper's back pocket standby when Le Verre Volé is complèt.

It goes without saying that Irish culture doesn't lack for originality or regional nuance. But a history of economic subjugation and misfortune has resulted in narrowly controlled industries of some of Ireland's most famous products, like whiskey and stout. The virtual monopolies of Guinness-Diageo (Guinness, Bushmills) and Pernod-Ricard (Jameson, Power's, Paddy's, Green Spot, Redbreast...) in these markets enforce a sameness in Irish pubs. For evidence, look no further than the template for potential pub owners called the Irish Pub Concept, codified by Guinness Brewing Co. in 1992 and still in circulation today.
Given the structure of the industry, I consider the opening of an original, characterful Irish pub anywhere a relatively courageous act.
To open one in Paris, a desert of decent pints, as Kieran Loughney has just done with his 11ème arrondissement gastro-pub The Green Goose, is almost heroic. There's not a Guinness or a shamrock in sight in the lovingly recreated Dublin-style wooden space. Instead he offers, every day of the week, a solid pub menu, every insanely underrated O'Hara's beer on tap, and the inimitably frank hospitality of a proper Irish pub.

from the ground up: yard, 75011
A few weeks ago I organised a hilarious and, thankfully, thereafter utterly unrepresentative meal for a visiting friend at Père Lachaise bistrot Yard. I hadn't been to the restaurant, but had heard about it for years and thought why not. Unfortunately for my friend, who idolizes the strenuous "modernist" cuisine of the likes of Inaki Aizpitarte, Yard was between chefs. We later learned that owner Jane Drotter had been in the kitchen that night, winging it.
All at the table agreed that it was like not even eating at a restaurant. It was like dining in the countryside at the house of a French friend's mother who had never been to restaurants. We fled to Clamato for a second dinner to remind ourselves what food with flavor tasted like, and my friends learned never again to trust me for a restaurant recommendation.
As usual, I was just ahead of my time. Not a week later, I learned that Shaun Kelly, ex-chef of Au Passage, and Eleni Sapera, ex-cook at Bones, were taking over kitchen duties at Yard, instantly rendering it a destination. So my friends and I returned on Friday for an entirely different register of meal. It was a testament both to how much Drotter got right with Yard in the first place, and to the transformative power of a certain circle of young foreign chefs in Paris

heaven is a place...: café trama, 75006
In the course of an otherwise friendly conversation the other day, a chef-restaurateur I know asked me in exasperation whether Paris contained any establishments I actually like.
I protested that, on the contrary, my tastes are quite easily discerned. I like boring restaurants best. One gets so sick of interesting restaurants.
My favorite meals in recent memory are those that would interest most dedicated gastronomic adventurers the least. The first was Bistro Bellet, Nico Lacaze's spiffing bistrot re-boot on the rue du Faubourg Saint Denis. More recently, I fell out of my chair for Café Trama, an impeccably tasteful rue du Cherche Midi restaurant whose reputation as a bourgeois canteen short-sells the enormity of its achievement. With a mild, unshowy menu by chef Bruno Schaeffer, a brilliant wine list by Le Rouge et Le Blanc editor Paul Hayat, and a welcoming, well-appointed dining room run by owner Marion Trama, Café Trama is like a beacon showing the way home to wayward novelty concepts citywide. All it does is positively ace the basics of restaurateurism, something everyone else has seemingly forgotten to do.

somm needed? : restaurant roca, 75017
The friends I brought to Roca during Fashion Week probably thought I was taking them to Beauvais Airport. The restaurant, a charming if somewhat faceless contemporary effort by Julien Ross, a cousin of the owner of 10ème arrondissement middleweights L'Office and Le Richer, is not situated in the pleasant, blithely unworldly Batignolles segment of the 17eme arrondissement. It's situated in the armpit thereof, just a stones throw from the peripherique.
In any other quartier, Roca would be raking it in. Chef Alexandre Giesbert, formerly of Le Richer, cooks precisely what Parisians wish to eat these days: sweetly accessible variations on menu staples, finessed to a sheen and enlivened with the odd exotic ingredient (seaweed tapenade, kumquat). Prices are extremely reasonable.
But Giesbert's cuisine is hobbled by the restaurant's far-flung location, and an almost punitively boring wine list. I nonetheless quite enjoyed our meal at Roca. Where ordinarily I'd loudly proclaim that the restaurant needs a sommelier, I find myself torn. Because our server that evening at Roca did something no sommelier in Paris has, to my knowledge, ever done: he promptly agreed that my first bottle of Marsannay was corked, and fetched another bottle without debate.

pioneers: le tagine, 75011
I started frequenting my friend Marie-Jo Mimoun's adorable Morroccan restaurant Le Tagine about two years ago. Mimoun has a superb little Rhône-focused wine list, featuring, among others, such legends as Domaine Gramenon, Dard et Ribo, and Jean Foillard. Yet on every visit I'm surprised by how little wine is consumed in the place. The haute-Marais clientele, largely white and French (i.e. non-Muslim), seem to stick to beer.
I can only assume it's because Le Tagine doesn't look like a wine place. It looks like a chill spot for some ethnic food with the family on a weeknight. And I get the impression that Paris diners - native and tourist - are more reluctant to purchase serious wine from people who don't look classically French.
Justin E. H. Smith, professor of history and philosophy of science at Université Paris Diderot, recently touched on this bias in a terrific NYTimes Opinion piece, where he astutely cited the link between European nativism and "the celebration of terroir and 'Slow Food'." It's a discomfiting alliance based on resistance to globalism and its effects. At worst, as in the case of Friulian winemaker / hatemonger Fulvio Bressan, the resistance is manifested as outright racism. In France, we see certain slippery creeps organising anti-Muslim protests under the guise of "sausage and wine" parties beside mosques. On a far more innocuous level, you have the fact that quality terroir-driven wines in France - let alone natural wines - are consumed almost exclusively in identifiably French restaurants.
In the case of Le Tagine, an overlooked gem of a restaurant that boasts stupendous service and solid soulful Morroccan cuisine alongside its well-priced wine list, it's a crying shame. On the plus side, there's almost always a six-top free when I need one.

parisian pizza: il brigante, 75018
As a foreigner in Paris of a certain profusely fertile age group, I often wonder what it would be like to raise a child here. These reveries fill me with dread. One day I would wake up surrounded by an ideologically French family. It's cute when French toddlers obediently proffer their cheeks to relative strangers for goodnight kisses before toddling off to bed. It's less cute when French employees explain they took a fourth cigarette break because they needed a little pause.
And it's frankly pathetic that over half the country agrees that François Holland's right to philander with spectacularly clumsiness shouldn't be questioned by journalists. The President's recent press conference reminded me of the climactic scene from the Wizard of Oz: "Pay no attention to the man behind the curtain." (To which the obvious response is, if you want us to do that, you should begin by keeping it behind the curtain.)
But sometimes I wonder if I'm becoming indoctrinated, too. I already demand room-temp cheese and fresh bread wherever I go, which means I can't live anywhere else in the world. And a real red flag went up the other day, when at the devilishly charming Montmartre restaurant Il Brigante I genuinely enjoyed a locally popular foodstuff I've heretofore foresworn entirely: Parisian pizza.

hidden in plain sight: willi's wine bar, 75001
I should clarify by explaining that Willi's Wine Bar, the pioneering Paris wine destination founded in 1980 by British expat Mark Williamson, is only hidden to people like me. For the past four years I've worked a few blocks away from the bar, and until the other week, I'd never been tempted to step inside.
I am, it turns out unreasonably, disinclined towards restaurants known for tote bags and wine-art posters. The children's-book storefront font alone is enough to turn stomachs. Willi's, from the outside, appears to be a wine bar for people who only drink wine when they visit Paris.
Actually, it looks a lot that way from the inside as well. Williamson's decades-long indifference to cool is reflected in the clientele, which I'd wager consists primarily of Paris' least-informed Anglophone tourists and expats, family vacations and business trips whose organisers may have breezed, once, through a Lonely Planet guide from 1997. So upon finally dining at Willi's the other night, I was fairly gobsmacked to discover that Willi's' regulars are, if anything, more informed than me. All this time they've been enjoying, in a friendly, unfussy environment, Paris' greatest Rhône list.

changing the landscape: bistro bellet, 75010
It took me a few years in Paris to appreciate how a single restaurant can cause a seismic shift in the city's dining landscape. Places like Le Verre Volé, Spring, and Au Passage opened as neighborhood spots. But they introduced new dining paradigms to Paris, and quickly became reference points for anyone daring to drag the boulder of French restauration up the hill of contemporary urban life.
To the ranks of those innovators I'd now nominate Nicolas Lacaze's Bistro Bellet, which opened just weeks ago on an excitingly leery stretch of rue du Fauboug Saint-Denis, basically the Cirque du Soleil of sketch. It's an area people keep promising me will gentrify, but until now those promises have seemed about as concrete as reincarnation for the nearly-dead. Bistro Bellet, with its clean décor, laser-sighted service, and conceptual savvy, is like a giant defibrillator for the neighborhood, and the bistrot genre at large.
It's a near-faultless restaurant that serves masterful Provençal-inflected cuisine and well-priced natural wines in a fussless environment from very early (6pm) until very late (midnight). Who's to say whether other restaurants will follow suit, and the innovative idea of turning tables will take root in Paris? For now I'll just say that Bistro Bellet presented one of the most fundamentally satisfying meals I've had all year.

yonne bike trip: le bougainville, vézelay
Deciding where to dine in Vézelay was an easy decision. We cased restaurant's lining the town's one road and lumped for Le Bougainville, the only restaurant where Michel Tolmer's "Epaule Jété" poster in the window indicated the presence of natural wines.
The poster these days is a reliable, if by no means infallible, indicator of a restaurant that prizes good wine. This in turn is a reliable indicator of a good restaurant. Dining on hunches : it's what you do in the countryside. Like oil prospecting, only less nefarious or profitable.
Anyway, my friends and I hit the motherlode in Vézelay that day. Le Bougainville is the realised idyll of a country bistrot: quaint, welcoming, with a wine list to die for and a superlative cheese plate. And chef-owner Philippe Guillemard and his wife Sylvie are like the angels who admit you to heaven after a lifetime of suffering Parisian hospitality. They're quiet enthusiasts who, from their restaurant perched in the shadow of Vézelay's famous basilica, offer the town's visitors a dining experience to rival the transcendental view up top.

an oyster bar for a better paris: clamato, 75011
I squirmed with embarrassment reading a recent NYTimes opinion piece bemoaning "How Hipsters Ruined Paris." Not because I consider myself a target.* But because I recognised another addition to the annals of expat self-hate, a genre to which I contribute from time to time. The author, Thomas Chatterton Williams, drapes his tirade in art history references worn as thin as the five-euro foulards for sale beneath Sacre Coeur. Degas, Manet, Toulouse-Lautrec - swaddle it on as thick as he may, nothing can bandage the authority-hemorrhage that begins with the opening clause of paragraph six: "When my wife and I first moved here in 2011..."
Seemingly dismayed that other New Yorkers preceded him to Paris, Chatterton Williams takes particular aim at the proprietors of Glass / Mary Celeste / Candelaria, incorrectly disparaging them as "a bunch of NYU grads." (Only one went there, to my knowledge.) It's hypocritical flanneur posturing to claim, as Chatteron Williams does, that brothels provide a better service to the South Pigalle area than Glass' sharp cocktails. But that author's desire for a vaguely Parisian experience is something I share, at least with regards to restaurateurism.
Its why I'm delighted that Bertrand Grébaut and Théo Pourriat, the consummately tasteful duo behind Septime, have opened a third establishment on their stretch of rue de Charonne. Clamato - a no-reservations oyster bar with seven tables and a long L-shaped counter - cements their reputation as the standard-bearers for fine contemporary French restaurateurism, unself-conscious and ungimmicky. Clamato's stellar cuisine is accompanied by the same well-selected natural wines and polished service that mark Septime and Septime Cave. The only sign that Grébaut and Pourriat might be succumbing to globalist trends is the goofy name.

n.d.p. in champagne: aux crieurs de vin (bistrot), troyes
Just as the town of Troyes in the Aube can be said to contain a history of France - from its origins as a Roman settlement, to its role as a medieval trade capital, to its present state of post-industrial muddling - so does Troyenne cave-à-manger Aux Crieurs de Vin, the town's one great restaurant, contain a history of natural wine in France.
The restaurant and wine shop was founded in 1998 by Jean-Michel Wilmes and Nicholas Vauthier, two wine afficionados who'd previously worked together at an unlikely place : faceless wine retail chain Le Repaire de Bacchus. Vauthier, when I spoke to him recently at his cellar facilities in Avallon, admitted that he and Wilmes were "among the worst" clerks to work in that shop - because it didn't stock anything they liked. Wilmes and Vauthier preferred natural wines, particularly from the Rhône, Beaujolais, and the Loire.
So they astutely wagered that in sleepy Troyes - a 90 min. train ride from Paris' Gare de l'Est - they could create a clientele for the wines they loved. Fifteen years later, the restaurant is still packed. Aux Crieurs de Vin has since expanded with a stand at the town's central Marché des Halles. Vauthier has departed, striking off in 2008 to make wine as a négociant under his ViniVitiVinci label. He sold his share of the company to a friend of Wilmes, fellow wine lover and former textile industry executive Franck Windel. In the kitchen, fixing up the most heavenly simple cuisine imaginable from expertly sourced ingredients, remains Wilmes' mother, Françoise. And in the cellar remains another history of natural wine in France : back vintages of the classic cuvées of France's natural wine vanguard, at extremely honest prices.

more to come : restaurant encore, 75009
The recent opening of charming 9ème market-menu restaurant Encore signals the inevitable outright codification of two recent Paris restaurant trends. The first is apparent from the restaurant's name, which follows in the cheery, brand-hungry, ultimately insipid footsteps of Merci, Grazie, and Beaucoup. The second is the fetishization of Japanese chefs. Abri, Vivant Table, Sola, Kei, Le Sôt l'y Laisse, L'Office... And now chef Yoshi Morie, formerly of 6ème restaurant Le Petit Verdot, returns at Encore. Not since Commodore Perry showed up with canons aimed at Edo have the Japanese found themselves in such pressing demand as in present-day Paris restaurant kitchens.
Encore un nouveau resto gastronomique avec un chef japonais ? Oui, encore un, même.
Happily, the opening of Encore also signals wine director Florian Perate's return to France, after a few years spent in London working with UK natural wine heavyweights Les Caves de Pyrène. Perate, originally from Troyes, formerly worked there for my favorite restaurant in the world, Aux Crieurs de Vin, and has been living and breathing natural wine since he was a teenager. What this tells me is that if, on opening night, Encore didn't quite yet possess enough personality to transcend trends, it assuredly soon will. At which point I'll return for an - oh, enough already.

sandwiches du terroir : u spuntinu, 75009
I had a mildly embarrassing moment the other day at U Spuntinu, the colourful Corsican épicerie I've been frequenting for sandwiches lately. I walked in, ordered my warm omelet sandwich and tomato-and-brocciu salad as usual, paid, and left.
Then I walked back in, having resolved, finally, to purchase one of the many bottles of Corsican wine on offer so I could justifiably say something nice about the place on the blog. U Spuntinu is a mildly exotic and utterly unpretentious lunch takeaway destination operated in a highly-routinised kaizen fashion by a team of formidable Corsican ladies - and what's more, they stock the wines of actual reputable estates like Yves Leccia, Clos Nicrosi, and Domaine Giudicelli, among others. (Domaine Antoine Arena is notably absent.)
But then I said to hell with it and walked back out again, because really what is the deal with the abysmal price-quality ratio of Corsican wine in general.

the highest bidder : table de bruno verjus, 75012
A good way for a writer to earn money is to cultivate a reputation for authority on a subject rich people like. Wine and food are quite good. Things like polo, yachting, and racehorses are probably even better. All you have to do is publish a great deal on these subjects and sooner or later some organization will reward you for your apparent expertise with a sponsorship or a panel discussion or a publishing deal. Because you will have attained credibility as bait for a luxury clientele.
French food writer, blogger, cookbook author, radio personality, and now restaurateur Bruno Verjus both exemplifies and transcends this phenomenon. On the one hand, he seriously knows his stuff. His blog, FoodIntelligence, is a treasure trove of good recommendations in any price range. In his writing and in his wide-ranging interviews with chefs and artisanal food producers, Verjus evinces a passionate appreciation for, and a nuanced understanding of, the business of real food.
But Verjus is no stranger to promo work. He helps organise the Omnivore food festival. He works as an advisor to Paris auction house Artcurial and coordinated its first charity auction of gastronomic products. And with Table, his new restaurant on sleepy rue de Prague in the 12ème, he's made an ambitious play for the affections of deep-pocketed food fetishists city-wide. It's a dream restaurant for anyone who has ever cried from a balcony, "Honey, let's go bid on a wheel of 48-month parm !"

another (excellent) restaurant : le six paul bert, 75011
Some time after we stopped dating, my ex F moved to a really superb apartment just next to one of Paris' most beloved bistrots and steak-frites destinations, Bistrot Paul Bert. I can be sure she did this purely to make me jealous, because she herself is vegetarian.
Despite this hurdle, we've managed to remain good friends. So back in January it was a tip-off from F that hipped me to the opening of Bistrot PB proprietor Bertrand Auboyneau's then-new place, Le Six Paul Bert, a small-plates spin-off just down the road from the motherships. (Auboyneau also has PB's adjacent seafood restaurant, L'Ecailler du Bistrot.) Initial rumours had given me to believe the new place was to be a wine bar - and the mere idea of a wine bar by the maestro behind Bistrot Paul Bert filled me with a kind of dread and awe, imagining how unbeatably great such an undertaking would be.
But the rumours turned out to be rumours. Leaving aside its functions as an épicerie and its speakeasy-style name, Le Six Paul Bert is Another (Excellent) Restaurant, albeit one that adopts some of the trappings of small-plates wine bars. The effect is to inadvertently highlight, for anyone who may have believed otherwise, how alien the idea of a new world-style wine bar is to Paris.

hot potato: roseval, 75020
The remarkable hyperactivity of Paris food-blogging is partly due to the outsize international attention paid what is essentially a medium-sized, semi-provincial city. Thirty million tourists per year arrive in Paris; before, during, and after their vacations, they constitute a readership.
The repetitive nature of Paris food-blogging - and that of Paris dining in general - derives from limited subject matter. Restaurateurism in this medium-sized, semi-provincial city has been, for reasons both economic and societal, slow to catch up to the democratisation of gastronomy that has occurred in the past few decades. Most of the remaining first- and second-wave "bistronauts" of the 1990's and 2000's have long since settled into comfortable routines of semi-pro mediocrity; outside of hotels and Michelin-starred places, one rarely encounters service or cuisine that takes itself seriously.
This is why laudatory coverage of a few restaurants - Frenchie, Le Chateaubriand, Spring, Rino, and a few newcomers including the subject of this post, the 20ème's Roseval - will continue unabated: there stilll aren't enough informal tables whose informality does not excuse staff from evincing actual chops and ambition.* These are the tables that impress bloggers that bloggers can afford. The creative team at Roseval - chefs Michael Greenwold and Simone Tondo and sommelier Erika Biswell - formerly worked at some of these places (Le Chateaubriand, Rino, and Le Chateaubriand, respectively), and to judge by the results of their collaboration, they learned all the right moves. Roseval is the best value of its too-small category: a place where those who work outside the financial sector can experience inventive food and thrillingly obscure wines served by people who believe in what they do.

planet of women : l'auberge flora, 75011
One would like to cite beauty, good taste, and pleasure as one's dining ideals. But, as in most fields, there are extra-aesthetic concerns. One has to rate establishments according to the scope of their ambition, and according to the service they provide in a given community.
By the latter standard, Bastille-quartier chambre d'hôte L'Auberge Flora is a certain kind of paradise, appearing like an oasis on an otherwise creepy and barren strip of road just east of the Marais. It's the new project of a veteran Paris chef called Florence Mikula, whose previous restaurants, judging by early reviews of L'Auberge Flora, permanently endeared her to a certain generation of Paris food writers. Several elements of the new restaurant are expertly in place, or nearly so: the staff (all ladies, when I visited) are warm and considerate, and a meal is fairly priced, given it's a hotel. What the byzantine menu of tapas lacks in precision or focus it makes up for in sheer novelty. (How nice, once in a while in Paris, not to consume a hunk of meat for dinner.)
But dear god, the décor. It's like getting nuzzled by a unicorn, and waking up surrounded by twittering birds beneath a rainbow on a cotton candy cloud floating magically above a Land Without Men, where wine lists are delivered with butterfly hairclips holding the pages together. (I am not kidding.)
