deck & donohue la terrasse at bob's bake shop, 75018


As of early May, Montreuil micro-brewery Deck & Donohue has teamed up with 18ème-arrondissement vegetarian canteen Bob's Bake Shop to liven up the latter's enormous terrace all summer.

Spearheading the project is Daniela Lavadenz, Thomas Deck's superhumanly energetic fiancée, who previously honed her skills in the kitchen at Au Passage and the dining room of Le Six Paul Bert. At Deck & Donohue La Terrasse, she offers a small menu of well-plated snack foods faithful to both the project's ambitions - a casual beer-garden sans garden - and its host, a vegetarian restaurant. The fried-food-and-frankfurter tendencies of the standard beer-garden concept are therefore replaced with hummous, marinated peppers, a slurpably brilliant salmorejo, and roast potatoes with chimichurri sauce, a nod to Lavadenz's Bolivian heritage. Supplementing the terrace's four taps of joltingly fresh Deck & Donohue beers are a bevy of natural rosés by the glass, from the likes of Julien Merle, Château Bas, and Frederic Rivaton.

To anyone like myself, reluctant, during summertime, to plunk down beaucoup euros for lengthy meals at fine Paris restaurants that invariably lack air-conditioning or even basic ventilation, Deck & Donohue La Terrasse offers a form of salvation. But the project's appeal will be tested by its location north of métro Lachapelle, a heavily immigrant neighborhood whose female residents have recently drawn significant media attention to routine harassment its streets. Salvation, in this case, comes with a healthy dose of social consciousness.

The great legacy of the cave-à-manger neologism has been to turn most new Paris wine shops into functional bars. You'd have to be either insane or misanthropic to open a wine shop that merely sold wine in Paris these days. The same license permits wine retail and restaurant activities and the line between what constitutes a restaurant and what constitutes a bar (which designation requires a more expensive and regulated Licence IV) is in effect extremely blurry. As often as not, lack of a License IV redounds to a proprietor's benefit, because he or she retains the bulletproof excuse that the kitchen is closed whenever it becomes necessary to decline to serve the visibly drunk or deranged. Inspections are rare, so proprietors are under no obligation to apply the same standards to normal happy drinking humans. Wine shop becomes ostensible restaurant, actual bar, albeit one that tends to close by midnight.

The latest to gainfully skate this line is the former manager of Thierry Bruneau's popular 12ème arrondissement wine bar Le Siffleur de Ballons, Frédéric Malpart, who opened his caviste - bar-à-vin Vignes in Belleville back in March. Like Malpart's former workplace, Vignes boasts a clean, blonde wooden décor, airy white lighting, kind staff bearing simple meat and cheese plates, and an open-minded selection of organic, biodynamic wines.

Unlike Le Siffleur de Ballons, Vignes has a handful of spacious terrace tables, and gives out on the broad boulevard de la Villette. It is instantly the only terraced bar serving a natural wine selection in Belleville*, and a valuable addition to the neighborhood renaissance presently underway.

clowns: clown bar, 75011

My distrust of Ewan Lemoigne and chef Sven Chartier's work goes back to the time Lemoigne botched my reservation at Saturne. Had Lemoigne handled the situation with any decency, I would've simply returned some other time. As it was, I didn't return to Saturne for over three years, until a magazine paid for my lunch there in March.

I just wanted no part of supporting such an inhospitable hospitality group. Until recently I was boycotting the Saturne duo's newer project, rue Amelot's Clown Bar, for the same reasons. Friends in the Paris restaurant scene, in efforts to persuade me to try Clown Bar chef Astumi Sota's lauded cuisine, would invariably arrive at the phrase, "But Ewan's not even there!"* I wouldn't budge, preferring instead to support nicer people at neighboring places like Repaire de Cartouche, Au Passage, Pas de Loup, Aux Deux Amis, and Le Tagine.

But hell, time passes. I'm about to leave Paris for a few months and I'd like to leave all grudges behind. Lunch at Saturne was excellent in March: I left utterly convinced of Sven Chartier's talents. And despite my differences with Lemoigne, I can certainly applaud the wine list he assembled at Saturne, which ranks among the city's best. Clown Bar, for its part, is a worthy addition to Paris' dining scene, offering an unmistakably upmarket experience of fine cuisine and natural wines in a pleasantly versatile format: small plates, Sunday service, a big terrace, a bar. True, it's more expensive than all its stylistic peers. But Paris has an under-served constituency who want that.

back yard: yard wine bar, 75011


When I first wrote about Jane Drotter's splendid contemporary bistrot YARD in April 2014, I couldn't help expressing astonishment that some of the passing Père Lachaise locals found prices too high. "Stinting flintnosed cheapskates," I called them. YARD the restaurant was then and still remains one of the city's best deals, its prices calibrated more to the expectations of its far-flung quartier than to the skills of chef Nye Smith or the superior quality of his product.

Drotter, presumably as part of a grand strategy for domination of nightlife in the eastern 11ème, has now opened, beside her bustling bistrot, YARD Wine Bar, a cosy roomful of high tables and a wide terrace where she continues to indulge her clientele. The small-plate menu prices are lower than those of most soft beverage programs in the Marais.

It's worth noting, though, that Drotter's clientele has changed. Where once it consisted of whoever happened to live or work nearby, it now resembles a cross-section of the Paris fine restaurant crowd, which is to say, chiefly people who unhesitatingly order the whole menu twice and consume oceans of natural wine. This dynamic, one hopes, will sustain YARD Wine Bar's paradisiacal micro-scene for many summers to come.

takes a village: le rubis, 75002


When asked what makes a wine natural, I often reply that a wine is natural when it is bought by natural wine buyers. I'm only being half-facetious: Paris is blessed to be home to several generations of curmudgeonly gatekeepers to the natural wine scene, restaurateurs and cavistes who have been working to define what natural wine is for upwards of thirty years. This cliqueyness has its drawbacks - such as an incomprehensibility to outsiders, unenforcability, etc. - but it also creates a palpable sense of community in Paris.

If Le Rubis, a terrific, new-ish neighborhood bistrot by Sentier, largely escaped notice upon opening in April, it's because reviewers were unaware of its impeccable bona fides in the natural wine community. Or unaware of the value of such cred. Co-owner Marie Carmarans is the ex-wife of celebrated Aveyron winemaker Nicolas Carmarans, and together they were the second generation of ownership of legendary natural wine bistrot Café de la Nouvelle Mairie. What's more, she's often aided at Le Rubis by her husband, Michel Tolmer, a cult figure in his own right for being the illustrator behind the ubiquitous "Epaule Jété" poster that has become, throughout France, the easiest way to identify a natural wine establishment.

Along with co-owner Geraldine Sarfati and chef Roberta Tringale, Marie Carmarans has created the closest thing the right bank has to the 6ème's Café Trama : a refined, contemporary bistrot with the confidence and smarts to remain simple.

never-ending terrace: les caves de reuilly, 75012


Remember that scene in Wayne's World, where Wayne and Garth do impressions of various US states, before being confounded by the unsatirizable dullness of Delaware?

I find the joke applies equally to Paris' 12ème arrondissement, a pancreas-shaped swathe of east Paris containing the marché d'Aligre, the Bois de Vincennes, and not much else. Between these two destinations, beneath the oft-overlooked Coulée Verte, lies a no-man's land of wide-laned roads and faceless residential blocks, as if the families lodging north of the Gare de Bercy tangle, faced with a choice between typical rail-side rat-commerce and nothing at all, chose the latter. Before last week, I'd only had reason to venture there once, in order to visit Au Trou Gascon, a well-priced one-star Michelin restaurant to whose Armagnac library I have, sadly, not since had the occasion (i.e. euros) to return.

Alarmingly, it now seems I may be back in the neighborhood rather often. My friend Mike Donahue - 12ème resident, fellow Philadelphian, and brew maestro behind Montreuil beer upstarts Deck & Donahue - recently introduced me to the re-vamped Les Caves de Reuilly, an august address for quality wine in Paris that seven months ago came under new ownership. The new owner, Pierre Le Nen, hails from Brittany, studied wine in Paris, and at some point in between, worked in the Vancouver and attained what is, in Paris, a rare fluency in both English and good hospitality. Under his direction, Caves de Reuilly maintains a balanced, mostly-natural wine selection and a vast, expandable terrace, where one can enjoy the former with zero corkage fee. For any Parisians feeling gipped about 2014's summerless August, Les Caves de Reuilly's terrace is a marvelous place to recoup.

coming round again: à la renaissance, 75011


Like any frequent host in Paris, I've learned to grin vacantly through inarticulate endorsements of "little neighborhood bistrots," those magical gold pots every tourist manages to discover at the end of the RER B rainbow. What our clients, friends, and relatives are discovering is usually not quality, but cuteness, for when one arrives in Paris from a New World nation, almost everything appears quite shrunken, frank, and twee. 

Whereas, in reality, the odds of stumbling upon a unambitious, mostly unknown establishment serving sincere and reasonably well-informed food and wine in Paris - the most visited and most discussed restaurant scene on earth - are vanishingly small.    

Yet, astonishingly, that is how I and my friend and colleague Meg Zimbeck of Paris by Mouth both independently came upon A La Renaissance, an anachronistic 11ème bistrot which, in all aspects save prices and opening hours, resembles its anonymous small-town-square archetype. That we hadn't heard of A La Renaissance before wouldn't be surprising, were it not for bistrot's massive natural wine list, and the fact that, almost alone among Paris natural wine spots, it is open past midnight seven days a week. In the revitalized Voltaire area, newly studded with destinations like Septime, Clamato, Bones, and Le Servan, A La Renaissance is an under-acknowledged pioneer.

when all else fails: aux tonneaux des halles, 75001


The classic Parisian defense of chaotic or miserable or under-exploited establishments insists that such places should be cherished for their flaws, since they represent the Paris of bygone age. And there are indeed more than a few restaurants - Le Petit Vendôme ! Le Rubis ! etc. - that truly merit such sentimentalism. But in my experience the Time Capsule Defense is in most cases a strange psychological sleight-of-hand by which restaurant patrons excuse, in addition to the unmistakeable avarice or viciousness or laziness in a restaurant's service, also themselves, for failing to voice any protest.

Eyes wander up from hideous plates to rest more comfortably on ancient vermouth ads and rustic farm equipment adorning the wall. A guest in this sort of restaurant abandons the idea of deriving culinary-aesthetic satisfaction or even sustenance from a meal, and instead considers the whole experience a sort of living museum, of chiefly historical or sociological interest.

"I've been to this museum before!" is what I usually shout in such situations, and skedaddle. If after a concert recently it was actually me who led a few friends to wine bar throwback Aux Tonneaux des Halles, it was only because it was a thronged Saturday night and we had no other choice, and because Aux Tonneaux remains distinguished, among weird Time Capsule Restaurants, for its superb natural wine list.
