n.d.p. in sardinia: tenute dettori


It's hard not to have strong reactions to the dense, craggy wines of northern Sardinian estate Tenute Dettori. My own feelings are tinged with nostalgia, because Dettori's wines used to fascinate me back when I worked as a sommelier at Osteria Mozza in Los Angeles. It being California in the mid-2000's, we had a proportion of clients whose palates were accustomed to strong, hot-climate wines, to whom even a Montepulciano d'Abruzzo or a Nero d'Avola would scan as middleweight and mild. (The list was all-Italian.) To such fellows - for they were invariably men - I would suggest Dettori's reds. 

The estate's "Tenores," "Tuderi," and "Dettori" cuvées routinely climb into the upper-teens of alcohol content, and they all show a brooding, mouth-conquering complexity that defies any accusations of lightness. Even if my guests proved unprepared for the wines' savoury notes or the various flaw-like zig-zags associated with low-sulfur winemaking, they nonetheless never failed to perceive that something somehow important was occurring on their palates. I rarely had bottles returned, even though the guests had asked for pleasure and I'd served them, instead, a puzzle. 

Puzzled is what I remain about the wines, even in the wake of the delightful press trip to the estate in Sennori that my friend the wine agent Emma Bentley organised for myself and several more notable wine writers this past October. Winemaker Alessandro Dettori is accomplishing so much: preserving the island's ancient viticultural tradition, maintaining his family's meticulous respect for their local terroir, reviving marginal native grape varieties, not to mention, of course, making serious wines that demonstrably improve with age. But with these accomplishments comes a final challenge that remains, for the moment, unanswered: how to make these strange, strong, majestic Romangia reds fit the context of a meal, or, for that matter, contemporary drinking among non-Supermen.

n.d.p. in florence: 5 e cinque


Florence is the only place I've ever been pickpocketed. As a friend and I snacked on one of the support columns of the Ponte Santa Trinita one evening a decade ago, some genial-seeming locals came up and spoke incomprehensibly about football maneuvers before demonstrating same at close quarters and robbing me in the process. It was all the money I had and I wound up busking the rest of that month.

As a result of this experience, I now walk down busy Florentine streets with my hands firmly placed over my back pockets, looking like some sort of constipated building inspector. Most nerve-racking for me is the famed Ponte Vecchio, a Hieronymus Boschian scene of beckoning trinket-hawkers, trilling gypsy beggars, and glass-eyed cargo-shorted tourists in visors and sweat-colored polos. The jangle of novelty key chains can be heard for miles. While revisiting the city last spring I hurried past it all in characteristic paranoiac style and waited for my friends some blocks ahead.

Imagine my surprise to discover, just a skip away from the Ponte Vecchio, the clean white storefront of 5 e Cinque, a modest, health-conscious, and well-appointed natural wine bar, the city's only one, as far as I know.

n.d.p. in florence: enoteca fuori porta


It's a travel truism that the more friends one travels with, the less one sees. Monuments, museums, and moments of local colour rush past one's eyes, as though one were seeing them through a bus window... Meanwhile one seems to spend hours waiting for one another to finish up in the sodden restrooms of unremarkable cafés full of vending machines.

And when one does at last arrive a destination, the destination itself becomes the subject of debate. Should we not try some other bar ? one's friends ask. One where one of us can get a cocktail, and another can have beer, and another can have wine? None of us are ever satisfied, one's friends admit, before laughing maniacally and cartwheeling off into the Florentine night to harass strangers.

My personal destination, since arriving in Florence for a friend's wedding last spring, had been Fuori Porta, a wine bar tucked in the hills above the via di San Niccolo that a native acquaintance had recommended. I've discussed previously the extent to which the term 'wine bar' is open to interpretation, but as a rule of thumb I've found the concept is more native to Italy, where people take espresso standing, than in Paris, where beverages in general are mostly used as exuses to occupy terrace seating. And indeed, when after much cajoling I did succeed in luring my friends away to Fuori Porta to continue drinking after the wedding dinner, we weren't disappointed. It's one of those rare places where a serious wine list coexists with a free-wheeling atmosphere, where seven or eight tanked young men in rumpled suits can enjoy an impromptu mini-vertical of Castell' In Villa Chianti.

n.d.p. in florence: enoteca bonatti


Florence, owing to its peerless artistic heritage of glorious renaissance treasures, is a good place to get suckered on industrial wine. Almost no one cares, however, because almost everyone is a broke study-abroad student content to drink Santa Cristina from plastic cups on apartment stoops. I'm describing myself, actually, age nineteen. I spent a month there, ostensibly studying Italian, in fact just desperately attempting to hook up with fellow students and certain of our tutors. I recommend anyone visiting Florence at age nineteen do the same.

The rest of us - including me and my reunited high school cohorts, now approaching our thirties, in town for a destination wedding - needed something decent to drink last spring.*

While I had predictably maintained no connections from my previous stay in Florence, I had in the intervening years become friendly with the native owner of a fashion boutique in the city. He didn't claim to be a wine expert, but the two recommendations he gave me both proved unimpeachable. The first was a wine shop on the refreshingly non-touristy Via Gioberti, east of the city center, called Enoteca Bonatti, where upon glancing at the shelves I instantly realised I'd need another suitcase for the trip back to Paris. Among the pearls on offer were a masterful Montalcino Rosso by Francesco Mulinari, and Abruzzese biodynamic legend Azienda Agricola Emidio Pepe's rare Cerasuolo d'Abruzzo rosé, which latter wine, I later confirmed with the winemaker's niece, is still not sold outside of Italy.

n.d.p. in milan: antica trattoria della pesa


Before we caught our train down to Florence, we took a very early lunch at a restaurant one of my friends had booked, Antica Trattoria della Pesa. We were actually the ones waiting outside before the restaurant opened.

I'm not sure how often this happens at Antica Trattoria della Pesa in the springtime. It's certainly on the tourist radar, and adjacent to the train station. But the lunch on offer is midwinter-hearty Milanese fare, at dinnertime prices. It's the sort of thing that seems appropriate if a cousin has just got married, or Napoleon has just been crowned; at most other times, it's can be a bit pompous, particularly to anyone accustomed to the lively, informal style of stateside Italian restaurateurism.

That's sort of the point with this variety of restaurant, though. The hearty Milanese fare I mentioned could be spruced up and delivered a thousand times better by a more ambitious restauranteur elsewhere. Restaurants like Antica Trattoria della Pesa succeed mainly because, being institutions, they evince no ambition. From the perspective of a certain conservative diner, ambition is the last thing one would want to perceive in a meal, and would be avoided at the sacrifice of almost any other criterion for a good meal, except high cost.

n.d.p. in milan: bar basso


Seeking to wring every last drink out of my brief stay in Milan, I arranged to meet my friend and host M for last call at Bar Basso, a proudly classic, slightly hokey cocktail bar famous for being the birthplace of possibly my favorite cocktail, the Negroni Sbagliato, or wrong Negroni.

The Negroni Sbagliato is simply a Negroni made with prosecco instead of gin. Just Campari, dry vermouth, and prosecco. I was introduced to the drink just a few years ago at a restaurant called Dell'Anima in the West Village, whose proprietor Joe Campanale has had great success with a variation involving roasted orange.

The cocktail's genesis story - all successful cocktails have at least one - is that Bar Basso's proprietor's father was mixing a Negroni and grabbed the wrong bottle, presumably realising his error when the ostensible gin bubbled and fizzed. The cocktail thus born is buoyant, bitter, immensely refreshing, and notably less inebriating than a classic Negroni, therefore ideally suited to endless aperitivo hours. It's also completely idiot-proof, with the exception of one time in Paris when I received it in a piddling frouffy champagne flute, which seemed gravely wrong at the time. Then again, before visiting Bar Basso and seeing how a Negroni Sbagliato was served by its originators, how was I to know ?

n.d.p. in milan: il kiosko


My visit to Milan this past spring was so cursory that it should not reflect poorly upon the city's dining scene if I say that my best meal there occurred on a traffic island.

Il Kiosko is what it says it is: a kiosk selling fish in the Piazza XXIV Maggio. In addition to supplying home chefs, Il Kiosko serves fritto misto and crudo fresh from the riviera to the aperitivo crowd around the canals. There are high tables, and benches if you arrive early enough. If you can ignore the car exhaust, it's a very inviting place to snack.

I'd suggest the car exhaust even adds something - an enlivening contrast to the sterile environments in which one customarily consumes raw fish. I can report that my friend M and I definitely felt like righteous urban pre-Prometheans, standing there on the curbside, tearing into the raw slivers we'd just seen nicked from the belly of the whole damn fish.

n.d.p. in milan: peck


As I poked around Peck I tried to take a couple pics. Got scolded. Apparently Peck - an historical Milanese fine food emporium - is as famous for its image control as it is for its vast stores of wine, olive oil, and ham.

It's a little baffling. Peck has neither the design elements nor the security risks that might warrant overzealous image control. It's a fine food shop, not a museum, not an embassy. Some fine food shops fulfill a quasi-ambassadorial role, it's true: think Turin's Eataly. But in comparison to the grandiosity and festival atmosphere of that place, Peck seemed a bit quaint, even at 3500m2 over three floors. The short young clerk who instructed me not to take pictures had been the same one who'd shadowed me as I perused the wine racks of Peck's basement level, offering little in the way of advice.

This happened to suit me fine, as I didn't need any. We had 20 minutes to kill in central Milan after lunch, and my friends M and V kindly indulged my desire to spend it all perusing shelves of Italian wine classics. In retrospect this may have been a mistake, since it meant that during our perambulations throughout the city later that day I was burdened with numerous cult-status bottles I'd been unable to resist.

n.d.p. in milan: la vecchia latteria


When I met my friend M for lunch in Milan en route to our friend's wedding in Florence, I became immediately distracted by a wine I'd never previously encountered: an obscure Emilia-Romagnan white called Ortrugo.

I've never lived in Italy and I don't speak the language. But I've managed a high-end Italian restaurant in the US, I've bought Italian wine for several restaurants, I've read numerous books on the nation's wines, and I've toured a fair portion of it firsthand, from Ivrea to Puglia. So most of what I encounter there feels more or less legible. Especially wine lists: to walk into an Italian restaurant in Italy and fondly recognise the names on the wine list is, ordinarily, a great comfort.

M and I were wedged into a table at La Vecchia Latteria, an historic vegetarian spot that had come recommended by a jazz guitarist / wine geek friend in LA. Wines available were neither extensive nor expensive; the waiters didn't seem to know a thing about them. They barked out the usual counsel reserved for moron tourists ("You like red? You like white?"). But I was still on a disembarkment-high from Malpensa,* delighted to see my old friend M, and besides, one great thing about white wine in Italy is that the obscurities are often so inexpensive as to constitute no risk whatsoever. (In case of disaster, there's always Peroni.)

n.d.p. in piemonte: cantina dei produttori di nebbiolo di carema


A.K.A. The other Carema, the one not made by Luigi Ferrando.

My friends and I were passing one more night in Switzerland on our way back to Paris. So on the road north from Monforte through Carema country we thought it might make for an interesting pit stop to visit the Cantina dei Produttori di Nebbiolo di Carema, whose wines none of us had tried. They have a U.S. importer - Doug Polaner - but neither my friend J nor I could recall having ever seen the wines for sale there.

Luigi Ferrando's sterling reputation as a producer of quality high-altitude Nebbiolo is partially defined in opposition to his neighbors involved in this cooperativo, so our expectations weren't exactly sky-high. Also, there was a huge lumpy novelty bottle outside of the tasting room, making the place look like some kind of Alpine saloon.

n.d.p. in piemonte: alessandro e gian natale fantino, monforte d'alba


On our last night in Monforte, my friends and I revisited Case della Saracca, with the aim of drinking something we hadn't had much of during our stay: mature Barolo.* A late-nineties vertical by Alessandro e Gian Natale Fantino stood out on the bar's list as unmissable bargains, and we recognised the name because every day for the past week we'd been walking by their cellars, which are located right next to the Da Felicin apartments in the old city of Monforte.

If we hadn't yet visited them, it was because the name Fantino is like the Smith of Monforte, making it difficult for first time visitors like ourselves to keep straight which Fantini produce quality wine, and which produce light fluff for cafe consumption. Alessandro e Gian Natale, we learned, fall into the former category.  Alessando Fantino worked ten years for the legendary Bartolo Mascarello, before founding his own organic estate with brother Gian Natale in the early 90's.

The 1999 Barolo "Vigne dei Dardi" we drank at Case della Saracca was in the end so vivid and racy that J and I were inspired to try for an inexcusably last-minute visit before we checked out the next morning. ("Are you free in ten minutes? Yes, ten!") To our delight, winemaker Alessandro Fantino was available to give us a tour. We assured J's wife C and the Native Companion it would be a quick tour, no tasting, since that is what Fantino offered us in Italian over the phone. We probably should have known better, as it happened. C and the NC fell asleep in their hammocks by the packed convertible, and J and I tasted the Fantino range straight through to the Barolo Chinato.

n.d.p. in piemonte: osteria dell'unione, treiso, then bruno giacosa, neive


After tasting the extremely ethereal Barbarescos of Cascina delle Rose with estate owner Giovanna Rizzioli, we followed her recommendation for lunch in nearby Treiso to Osteria dell'Unione, where we had a meal as perfectly enjoyable as any other we'd had in the region.

Let's be honest, though. I can only describe vitello tonnato so many times on this blog, as in here, and here, and, come to think of it, I had one here also, though I declined to mention it. The most distinctive things about the meal at Osteria dell'Unione were my friend J's nicely piquante rabbit, and the fact that the plate of cured meats he'd ordered as a starter came with what appeared to be, and actually was, a tiny omelet. (Genius!)

If I post about the experience now, it's primarily as a segue to air some thoughts on one of the meal's less interesting elements, the 2006 Spumante Brut by Bruno Giacosa. Shortly after the meal we were to visit that winemaker's winery in Neive, where my trusty iPhone camera was to totally fail me,* meaning I lost out on some useful pics of the premises and of the very intelligent, very young new winemaker Francesco, who would've been in 1st grade when I was in 3rd grade, that is how young he is. Giacosa's reds are self-evidently magnificent, from the elegant Dolcetto on up to the cru Barbaresci; I won't burden them with more praise here. I'm more curious about why the Giacosa estate goes to such efforts year after year to produce and promote what is, after all, a merely okay sparkling wine.

n.d.p. in piemonte: cascina delle rose, barbaresco


In principal, one goal of anyone making wine naturally - organic, biodynamic, or anywhere in between - is heightened expression of terroir. I'm of the opinion that the success of the venture is most perceptible when one evaluates it across the boundaries of individual domaines and regions; in general, one might say, natural wines tend to reflect more dramatically the vicissitudes of the vintage and the composition and exposition of the soil. This is because, when compared to the panoply of invasive techniques available to the contemporary winemaker, natural winemaking is a fundamentally subtractive process. It is, at least in part, a resistance to overcorrection of naturally occurring traits.

Nevertheless, when we use terms like "non-interventionist," we risk obscuring the fact that winemaking itself is one big intervention. What we taste in a glass remains a product of the individual habits and customs of a given estate. Evaluating wines is always a more or less informed stab in the dark about which traits come from the whims of nature and which come from the whims of man.

This brings me, finally, to my conflicted feelings about Cascina delle Rose, a 3ha organic Barbaresco estate we visited in Piemonte this past August. The estate had come highly recommended from two different sets of friends - a surprise, since despite having tasted the region's wines pretty exhausively, I'd never heard of them. Estate owner Giovanna Rizzioli was a marvelous hostess, intelligent and expressive, and the best of the wines we tasted reflected the same qualities. There was, nevertheless, across the range of wines, a rigidity of style that felt determined by something other than the terroir of the estate's 3ha of vineyards. (Cue darkness, stabs.)

n.d.p. in piemonte: saint peter's country chapel


Between towns of Barolo and La Morra on the via San Pietro, there's a few picnic tables and a water fountain at a rest station named for the boarded-up and presumably empty chapel that overlooks it, Saint Peter's Country Chapel. Although it looks like there might be a magnificent view of vineyards just over that hill, I can attest there is not: the immediate area seems to have insensibly been landscaped in such a way as to specifically prevent any kind of vista.

Nevertheless it made a fine site for a picnic after a trudge around Alba where everything was shut at midday on a Sunday. We'd packed various cured meats and gorgeous irregular tomatoes and ate them with a shared knife. Mid-meal we were all extremely bemused to learn that, according to the signage, Saint Peter's Country Chapel had been built by "the sole survivor of a tragic orgy" that had taken place in the old castle across the road.

n.d.p. in piemonte: stefano bellotti & cascina degli ulivi, novi liguri


Throughout the recent trip to Piedmont, the Native Companion and my friend J's wife C would ask us before each scheduled visit to a vigneron whether we thought it would be worth their coming along. What they meant is: would visiting vigneron X be better than a dip in the pool? Would it be better than thirty pages of a novel? Would it beat viewing certain rural churches?

Unfortunately, since it was our first time in the region, J and I could offer them only the Gump-like but invariably true answer that you just never know what you are going to get, visiting vignerons. Sometimes you never see the vigneron and a cellar hand just explains what fermentation is. Sometimes it's an all-business experience and you leave after fifteen minutes clutching a price list. As wine geeks we continue to nose around wine estates because oftentimes it's better than that. As much as can be learned from books and the internet and copious tasting, there's just no substitute for the ambient knowledge that gets transmitted when you visit winemakers in their element, and hear how they themselves feel about their wines and their methods of production.

I had an inkling it would be worthwhile visiting pioneering Gavi producer Stefano Bellotti at his Cascina degli Ulivi estate in Novi Liguri. It wasn't a convenient trip from Monforte - almost two hours by car - but J and I were both fans of Bellotti's wines, and furthermore we were curious to meet one Italy's premier biodynamicists. In retrospect I can say that, while Gavi is kind of remote, and the rest of the region's wines have yet to interest me in the slightest, a visit to Cascina degli Ulivi is indeed a rewarding and inspiring experience, an entry into a freewheeling ecological community that, among other achievements, makes some utterly enchanting wines.

n.d.p. in piemonte: trattoria della posta, monforte d'alba



I'm trying to remember where it was I first saw the enormous, old-school Italo-swag menu of Trattoria della Posta, a restaurant renowned for serving Monforte's most traditional meal. It was either as wall-art in the bathroom at Paris wine bistro Le Bistral, or it was in a collection of menus maintained by a former employer back in LA. Or was it the collection of the former employer in Boston who collected old menus?* Suffice it to say the menu is memorably huge.

Opening it brings the same sensation one gets stepping into the vast, stately restaurant itself, situated just east of town, with a parking lot to itself. It is the feeling of entering a proud, entrenched culinary tradition, hermetically sealed against outside influence. One wishes one had a mustache, or at least a cigar.

Trattoria della Posta was founded by the Massolino family in 1875, and continues to be owned and operated by the same family today. Mindful of how much we'd been spending, my friends and I allowed ourselves one last serious grandstanding meal before leaving Piedmont, and went with TdP out of two restaurant recommendations we'd received from Roberto Conterno, saving the less historied establishment for some future visit.

n.d.p. in piemonte: g.d. vajra, vergne


I'm not often told I should be more critical. At times however I do sense that in covering winemakers on this blog I tend to be a bit polite and circumspect, at the expense of clarity or humor. I'm not unique in this; it is an industry norm, as far as I know. Because, no matter what one may think of the wines one tastes with winemakers, in writing about the experience afterwards one always owes a small debt of gratitude for their welcome, and for their time. This is to say nothing of how wine writers, due to the structure of the industry, usually need to maintain positive relationships with their subjects in order to guarantee continued access, and thus their livelihoods...*

With that in mind, I can say I had a really enjoyable time this past August visiting the G.D. Vajra winery in Vergne, west of the town of Barolo, where my friend J and I toured the facilities and tasted through current vintages with the family's sunny tasting coordinator Sabrina. We met briefly with Aldo, Giuseppe, and Milena Vaira, and thanked them for making time for us during such a busy period. It was the first day of harvest - Pinot Noir destined for spumante first, as I recall - and there was a genuine electricity in the air.

But, it has** to be said that, with certain notable exceptions, I do not like the wines.

n.d.p. in piemonte: giorgio barovero, monforte d'alba


The great wines of Piedmont are a popular counter-argument to the concept of natural wine. As much as wine geeks like myself might advocate use of wild yeasts, low sulfur, and total disavowal of pesticides, herbicides, anti-mildew agents and so on, we're still uniformly unable to refute the majesty of good Barolo and Barbaresco, appellations in which these virtuous habits are rare to non-existent. So visiting Piedmont recently I maintained a sort of hopeless mini-agenda to sniff out whatever natural or organic wines I could find in the area, out of curiosity for how Piemontese grapes would be affected by more or less natural viticulture.

What I tasted was, on the whole, immensely intriguing. Like, potential-business-opportunity intriguing, for someone with more means and patience and Italian skills than I presently possess.

There are apparently three small organic producers in Monforte alone. One, I'm told, is Francesco Clerico, a cousin of the more famous Domenico, neither of whose wines we were unable to taste on this trip. Another is Enrico Boggione, whose rich and vibrant Nebbiolo d'Alba is available for a song at the little organic boutique run by his wife off the main square in Monforte. The third is Giorgio Barovero, to whose stunning 2005 Nebbiolo d'Alba we were introduced by the excellent bartender at Casa della Saracca. My friend J and I enjoyed the wine so much we set up a tasting appointment for the next day, and drove the short distance to Barovero's spare cellars in the valley just south-east of Monforte, outside of the Barolo appellation, on the frontiers of Piemontese natural wine.

n.d.p. in piemonte: case della saracca, monforte d'alba


Midway through our stay in Piedmont I was delighted to add Monforte d'Alba to my list of towns home to better wine bars than Paris. On the recommendation of Roberto Conterno we ascended the steep narrow paths into the old town to visit Case della Saracca, a multivalent establishment whose many other functions - restaurant, wine shop, boutique hotel - do not prevent it's ground-floor wine bar from being a social hub of the town's winemakers.

We found ourselves returning night after night, partly because it was just uphill from our rented rooms (providing an easy slide home), and partly because we befriended the delightful bartender, Emanuela, who was full of inspired recommendations.

On more than one occasion we were impressed by something we tried by the glass, only to encounter the winemaker passing through that same evening - the sort of charming coincidences that can only occur in a very small community.

n.d.p. in piemonte: walter porasso at bovio, la morra


J and I pulled up in his in-laws' Audi at Azienda Agricola Bovio at what we were pretty sure was the agreed-upon time. There had been some language-related confusion. "That's not Walter," I said to J, as a short, smiling, heavily-tanned fellow in a wife-beater and plaid shorts ambled over to the car. 

Bovio is owned by a La Morra family more famous for their restaurants than their wine; we were to meet their longtime winemaker Walter Porasso, about whom I knew only that he spoke very little English, and that he'd been responsible for a heavenly half-bottle of 1998 "Gattera" I used to sell quite often at the restaurant where I used to work in LA. While the Bovio wines have a fine reputation, they don't regularly receive superstar acclaim, at least not in the states, and accordingly my expectations for this visit were about ankle-high. 

Well, I was wrong about everything. It was indeed Walter Porasso, more salt-of-the-earth than I'd imagined. And the whole visit turned out to be an object lesson in why it's worth visiting more than just the grand names of Barolo.
