let's talk about aix: the côteaux d'aix en provence AOC


When I spoke to Var natural vigneron Jean-Christophe Comor back in July, he aired certain criticisms of the Conseil Interprofessionnel des Vins de Provence, or CIVP: chiefly, that tended to market rosé colour over rosé terroir. He found it absurd that the rosés of Provence are divided into the appellations Côtes de Provence, Côteaux Varois en Provence, and Côteaux d'Aix en Provence. "They don't all have the same terroir," he said. "But they all do the same [vinification] techniques."

As an itinerant wine writer and bystander to the scenario, I'm actually perfectly happy there are three distinct Provençal appellations, because it apparently means there are several distinct promotional budgets. So it was that, in the wake of a press junket to the Côteaux Varois this past May, I was invited to return to Provence in late September to attend a tasting of the wines of the adjacent Côteaux d'Aix en Provence appellation. The kicker - in fact, the trip's redeeming feature - was that this time we were to principally taste the region's oft-overlooked red wines.

At 4127ha, the Côteaux d'Aix en Provence appellation has only about a fifth of the planted surface as the adjacent Côtes de Provence, while covering a similar area. This testifies to the more urbanized landscape of the Côteaux d'Aix en Provence appellation, which extends from Arles and Saint-Rémy to the respective outskirts of Marseille and Aix. The terroir is, to put it lightly, diverse, varying from hilly sites bordering the Côteaux Varois to lowlands bordering the Étang de Berre and coastal sites west of Marseille. That's not to say the appellation's reds lack identity. The tasting of the appellation's red wines, held at the Château Vignelaure, revealed a slightly anachronistic Bordeaux fascination, presumably attributable to the fabulous wealth and conservatism of local landowners. But there were highlights, too.

the tavel rosé of today: couleur tavel 2018


"Couleur Tavel" is an annual tasting festival held in the Gard village of Tavel to celebrate its eponymous rosé appellation. I had the pleasure of attending this July on the invitation of the Lyonnais press agency Clair de Lune. The public tasting itself, held in the warren of ancient gardens in Tavel's town center, was a labyrinthine clusterfuck, choked with giddy wandering families; it was followed by dinner at a wagon circle of food trucks surrounding a sort of dance-free dance-party, resembling a nocturnal exercise video, held in the Place du Président Leroy.

Given that the appellation comprises just 930ha, and is devoted exclusively to rosé wine, the "Couleur Tavel" event is not particularly diverse, nor does it appear to be aimed at a professional market. I was still delighted to attend, because it offered an occasion to familiarize myself with the prevailing norms of the Tavel appellation. The only Tavels I ever seem to drink are the wines of the appellation's black sheep, Eric Pfifferling, and as magnificent as his deep red rosés are, they are unrepresentative of the appellation at large.

Perhaps it is better to say Pfifferling's wines are unrepresentative of the Tavel appellation as it exists today. As I've come to understand it, a rosé wine, at the time the Tavel appellation was decreed in 1936, resembled more a light red wine than the transparent pink wine present-day drinkers have come to know as rosé. The overwhelming majority of the vignerons of Tavel, meanwhile, are producing something in-between, but closer to the latter, a watermelon-coloured rosé neither quite of the present era, nor of tradition.

jean-christophe comor on natural rosé vinification


In early July I decided on the spur of the moment to join the Native Companion for an evening in the Provençal seaside town of Hyères, where she'd gone for work. The sojourn presented a fine occasion to follow up on my recent chat with Var natural winemaker Jean-Christophe Comor, who I'd run into at the Côteaux Varois AOC 25th Anniversary party back in late May. His 15-hectare domaine in La Roquebrussanne is just a 45 minute drive north from Hyères.

I've bought Comor's wines for several restaurant wine lists in Paris over the years, having initially made his acquaintance at various tasting salons. As a vigneron, he cuts a peculiar figure: owl-eyed, eloquent, slightly hunched, he's a former souverainiste politician and law professor who renounced politics in 2002 to make natural wine in the Côteaux Varois.

Today his idiosyncratic range of wines - 11 cuvées in all - includes highlights like the lightly-macerated, foudre-aged carignan blanc "Analepse" and a suavely powerful Bandol bearing the silly pun "L'Amourvèdre." But I have a special fascination with Comor's two natural rosés, simply because the category itself has grown so scarce in the present era of ultramodern colour-corrected Provençal Stepford-Wife rosé. In the cellar of his beautiful newly-constructed cuverie - built from local stone along the same foundations as an ancient sheepfold - we discussed what it means to produce natural rosé in Provence today.

as var as I know: 25 years of the côteaux varois en provence AOC


My first move, upon being freed from my recent restaurant work somewhat sooner than anticipated, was to belatedly accept a lot of press junket invitations. This is how at the end of May I found myself spending two days shuttling around the Var with a gaggle of other journalists and bloggers, on the occasion of the 25th anniversary of the Côteaux Varois en Provence AOC

The Côteaux Varois en Provence, a predominantly red wine appellation at its ascension to AOC in 1993, now devotes a whopping 91% of its production to rosé. I had mentally prepared myself for two days of industry doublespeak intended to pass off the effects of highly invasive vinification as the result of unique terroir and know-how. Perversely, this the reason rosé production holds such fascination for me: in no other wine category is there such a vast, irreconcilable gulf between what the mass wine market wants and what can feasibly be produced via natural vinification methods.

Natural rosé is one thing. The Provençal rosé currently soaring in popularity - salmon-coloured, dewdrop-clear, fruit-basket-flavored - is a different product entirely. In a surprisingly double-edged speech he gave at the AOC’s anniversary party in Saint-Julien, Gilles Masson, director of the Center of Research and Experimentation on Rosé Wine, called the “Provençal rosé idéotype” - a wine that is “transparent, fruity, round” - “almost an invention.” He went further than his prepared slides, saying it was “a type of wine that never existed in history.”

the île de porquerolles: domaine de l'île, domaine perzinksy & domaine de la courtade


I sometimes worry I come across as too principled. I so rarely get invited on press junkets. I suspect many PR people imagine me to be a saber-rattling natural wine radical who, if cornered on a cliff's edge by LVMH regional sales managers, would sooner jump than appear in their selfies.

In fact, I quite like playing the shill now and then. I have no trouble appearing gracious and amused when plied with free things. So it was that I recently enjoyed a splendid trip to the Île de Porquerolles the other day, organised by the Côtes de Provence AOC in conjunction with a Lyonnais press agency called Claire de Lune.

The Île de Porquerolles is an island south of the Provençal town of Toulon. Formerly a private island belonging to the industrialist François Joseph Fournier, who purchased it in 1912, Porquerolles was bequeathed to the French state in 1985, and today is home to three wineries: Domaine La Courtade, Domaine Perzinsky, and Domaine de l'Île. "There are three domaines on the Île," explains Domaine Perzinksy oenologist Richard Auther, "And we have three completely different styles."

the return of christophe: amarante, 75012


Chef Christophe Philippe's new Bastille-adjacent restaurant Amarante, like the cacklingly under-designed eponymous restaurant he maintained for a decade in the shadow of the Panthéon, is open Sundays and Mondays, the better to cater to his principal clientele, his fellow restaurant folk. On any other restaurant's off-night, he entertains tastemaker regulars like food writer Bruno Verjus, Le Baratin's Raquel Carena and Philippe Pinoteau, and Autour d'Un Verre's Kevin Blackwell. When my friend and editor Meg Zimbeck and I visited last Sunday, we ran smack into our friend Thomas Legrand, formerly of La Muse Vin, now manning the decks at La Crêmerie. Philippe, lumbersome of gait and shy as a shoe, is the unlikely mascot of a certain very discerning milieu.

Why should this milieu particularly admire his cuisine, among all the others on offer in Paris' present-day cornucopia? Well, who but his fellow chefs and restaurateurs, those who endure the pressure to present an impression of novelty with each new restaurant and each day's menu, are as likely to have realised, like Philippe, that the search for novelty in cuisine is futile?

Philippe is among the few chefs courageous enough to live the implications of that realisation. At Amarante he offers the exact same pointedly-unfussy, rigorously-sourced bistrot menu and the same well-priced natural wine list as at his former establishment. Amarante is duly aglow with the same monkish sense of serenity and confidence, albeit with slighter better lighting, and a less hideous font on the windowpane.

takes a village: le rubis, 75002


When asked what makes a wine natural, I often reply that a wine is natural when it is bought by natural wine buyers. I'm only being half-facetious: Paris is blessed to be home to several generations of curmudgeonly gatekeepers to the natural wine scene, restaurateurs and cavistes who have been working to define what natural wine is for upwards of thirty years. This cliqueyness has its drawbacks - such as an incomprehensibility to outsiders, unenforcability, etc. - but it also creates a palpable sense of community in Paris.

If Le Rubis, a terrific, new-ish neighborhood bistrot by Sentier, largely escaped notice upon opening in April, it's because reviewers were unaware of its impeccable bona fides in the natural wine community. Or unaware of the value of such cred. Co-owner Marie Carmarans is the ex-wife of celebrated Aveyron winemaker Nicolas Carmarans, and together they were the second generation of ownership of legendary natural wine bistrot Café de la Nouvelle Mairie. What's more, she's often aided at Le Rubis by her husband, Michel Tolmer, a cult figure in his own right for being the illustrator behind the ubiquitous "Epaule Jété" poster that has become, throughout France, the easiest way to identify a natural wine establishment.

Along with co-owner Geraldine Sarfati and chef Roberta Tringale, Marie Carmarans has created the closest thing the right bank has to the 6ème's Café Trama : a refined, contemporary bistrot with the confidence and smarts to remain simple.

pioneers: le tagine, 75011


I started frequenting my friend Marie-Jo Mimoun's adorable Morroccan restaurant Le Tagine about two years ago. Mimoun has a superb little Rhône-focused wine list, featuring, among others, such legends as Domaine Gramenon, Dard et Ribo, and Jean Foillard. Yet on every visit I'm surprised by how little wine is consumed in the place. The haute-Marais clientele, largely white and French (i.e. non-Muslim), seem to stick to beer.

I can only assume it's because Le Tagine doesn't look like a wine place. It looks like a chill spot for some ethnic food with the family on a weeknight. And I get the impression that Paris diners - native and tourist - are more reluctant to purchase serious wine from people who don't look classically French.

Justin E. H. Smith, professor of history and philosophy of science at Université Paris Diderot, recently touched on this bias in a terrific NYTimes Opinion piece, where he astutely cited the link between European nativism and "the celebration of terroir and 'Slow Food'." It's a discomfiting alliance based on resistance to globalism and its effects. At worst, as in the case of Friulian winemaker / hatemonger Fulvio Bressan, the resistance is manifested as outright racism. In France, we see certain slippery creeps organising anti-Muslim protests under the guise of "sausage and wine" parties beside mosques. On a far more innocuous level, you have the fact that quality terroir-driven wines in France - let alone natural wines - are consumed almost exclusively in identifiably French restaurants.

In the case of Le Tagine, an overlooked gem of a restaurant that boasts stupendous service and solid soulful Morroccan cuisine alongside its well-priced wine list, it's a crying shame. On the plus side, there's almost always a six-top free when I need one.

hidden in plain sight: willi's wine bar, 75001


I should clarify by explaining that Willi's Wine Bar, the pioneering Paris wine destination founded in 1980 by British expat Mark Williamson, is only hidden to people like me. For the past four years I've worked a few blocks away from the bar, and until the other week, I'd never been tempted to step inside.

I am, it turns out unreasonably, disinclined towards restaurants known for tote bags and wine-art posters. The children's-book storefront font alone is enough to turn stomachs. Willi's, from the outside, appears to be a wine bar for people who only drink wine when they visit Paris.

Actually, it looks a lot that way from the inside as well. Williamson's decades-long indifference to cool is reflected in the clientele, which I'd wager consists primarily of Paris' least-informed Anglophone tourists and expats, family vacations and business trips whose organisers may have breezed, once, through a Lonely Planet guide from 1997. So upon finally dining at Willi's the other night, I was fairly gobsmacked to discover that Willi's' regulars are, if anything, more informed than me. All this time they've been enjoying, in a friendly, unfussy environment, Paris' greatest Rhône list.

more to come : restaurant encore, 75009


The recent opening of charming 9ème market-menu restaurant Encore signals the inevitable outright codification of two recent Paris restaurant trends. The first is apparent from the restaurant's name, which follows in the cheery, brand-hungry, ultimately insipid footsteps of Merci, Grazie, and Beaucoup. The second is the fetishization of Japanese chefs. Abri, Vivant Table, Sola, Kei, Le Sôt l'y Laisse, L'Office... And now chef Yoshi Morie, formerly of 6ème restaurant Le Petit Verdot, returns at Encore. Not since Commodore Perry showed up with canons aimed at Edo have the Japanese found themselves in such pressing demand as in present-day Paris restaurant kitchens.

Encore un nouveau resto gastronomique avec un chef japonais ? Oui, encore un, même.

Happily, the opening of Encore also signals wine director Florian Perate's return to France, after a few years spent in London working with UK natural wine heavyweights Les Caves de Pyrène. Perate, originally from Troyes, formerly worked there for my favorite restaurant in the world, Aux Crieurs de Vin, and has been living and breathing natural wine since he was a teenager. What this tells me is that if, on opening night, Encore didn't quite yet possess enough personality to transcend trends, it assuredly soon will. At which point I'll return for an - oh, enough already.

the great american sandwich: verjus, 75001


The other day at lunchtime my colleague R and I announced to our high-pitched and highly amusing senior colleague L that we were going out to get sandwiches. As is her wont, she asked us to pick up one for her. I said no problem, I'd text her a pic of the menu.

No no no, she said, just get me jambon à l'os, with cantal...

At which point I was obliged to explain we were not going to any old interchangeable French sandwich place. R and I were going to Restaurant Verjus*, whose newly launched lunchtime sandwich program is essentially a Great American Road Trip of sandwich nostalgia. There's a slim menu of sandwiches, each named after its culinary inspiration: a pork belly homage to Momofuku's David Chang, fried chicken ode to Bakesale Betty in Oakland... It's like owners Braden Perkins and Laura Adrian wanted to adapt the Proustian madeleine to the American palate, and give their numerous expat fans something to make their hearts melt and their mouths water.

straight classic: le severo, 75014


If we define popular staples as foodstuffs that could conceivably be employed as a "health boost" icon in video games - things like steaks, burgers, and fries - then we've pretty much isolated a segment of cuisine that everyone and their mother have strong opinions on, no matter how indifferent or clueless these diners may be about anything more sophisticated than sesame buns. Classic, simplistic comfort food is just very inviting to armchair critics. This manifests itself nowadays in the rainforest of blogs devoted such cuisine.

Conceptually pure restaurants like 14ème steak standby Le Severo are partial beneficiaries of this dynamic: the restaurant is rightfully famous city-wide for its marvelous cuts of meat. Nevertheless I can't help feeling that something gets glossed over, lost in the branding, when I read about the place: namely, the impressive sophistication of the panoramic blackboard wine list, which is basically a big billboard for all that is good about Le Severo's supplier, the occasionally controversial* Caves Augé.

domaine les mille vignes at spring boutique, 75001


I'll admit to having had a kind of skeptical interest in attending a recent tasting with winemaker Valérie Guérin of Domaine Les Milles Vignes at my friend Josh's cave in the 1ère, Spring Boutique. Like many wine geek friends, Josh and I tend to gently rag on each other's tastes now and then. I accuse him of liking everything too sleek: silky tannins, quiet acid, polite persistence. He rightly accuses me of drinking mostly oxidative unprofessional farmer wines.

We had differed on Domaine Les Milles Vignes' 2007 Vin de Pays de l'Aube Rosé. At 28€ retail, it's up there with the Château Simones and Domaine Tempiers of the world, in terms of baller rosé. Josh was all bee's knees about it. After sharing a bottle with some friends the week before, I was more ambivalent. I appreciated its waxen dark cherryness, its length, and the fact that it was still proudly drinkable after 4 years - but found it a bit unnuanced, particularly for the price. 

A second tasting didn't persuade me otherwise. The tasting with Mme. Guérin was nevertheless quite worthwhile, for the impressive back vintages of Fitou that appeared towards the end of the tasting, and for introducing me to Guérin's superb Muscat de Rivesaltes, the best of its type I can remember encountering.

font-astic: christophe, 75005


Christophe, situated not far from the Pantheon, across the square from buoyant 5ème bar à vin Les Pipos, is the kind of restaurant that only a positively bulletproof recommendation could ever induce me to enter. Happily we received just such a recommendation from my friend J (whose previous credits include having hipped me to heavenly 9ème Chinese joint Q-Tea) recently. His sage direction during a recent visit enabled our large group of friends to ignore (deep breath):
1. The banner use of the font Curlz, which is to dopey French bistro favorite Comic Sans what snuff films are to bad romantic comedies.
2. The restaurant's décor, which resembles nothing so much as a restroom in a bank in Chinatown.
3. The wincingly mangled English translations on the menu, which include such inedible delights as "leg of lamp."*
- and thereby allowed us to savor one of the greatest meals I've had in Paris, replete with well-chosen natural wines at prix caviste, many from unexpected vintages, and meats - almost nothing but meats - selected with the kind of care one normally associates with high-caste arranged marriages.

The place is phenomenal.

joyous naked pagans: natural wine tasting at autour d'un verre, 75009


After making the rounds at Spring's "Une Promesse du Vin" tasting recently, I popped over to meet my friends D and C at Autour d'Un Verre's significantly more informal natural wine tasting in the 9ème.

The differences in atmosphere and philosophy between the two restaurants and their tastings could not be more pronounced. Both places prize fine winemaking and both are very enjoyable. But where Spring very astutely emphasizes the fineness - as in comprehensive luxury, right down to the Aesop soap in the toilets - the scene at Autour d'Un Verre seemed to celebrate rather the winemaking, the physical act itself, with all the attendant sweatshirts, red stains, and mud-encrusted boots.

It's also just the difference between very established vignerons - those at Spring that day, accustomed to high profile wine events in NYC, London, San Francisco, and so on - and the up-and-coming ones, like the ragtag gang of bearded farmer-savants who manned the tables at the Autour d'Un Verre tasting, many of whose delicate unsulfured wines see limited distribution even in France. Some of the wines of this latter category of vignerons are true mystical natural wonders, with a joyous naked pagan quality to them. Others just taste amateurish and unhygienic - 'look what I found in this barrel' wines.

I tasted both that day at Autour d'Un Verre, but for the sake of diplomacy I'll focus on the naked pagans.

impromptu mas foulaquier tasting: spring boutique, 75001


The other night I promised myself just an apéro at Spring Boutique with Josh and my friends D and C. But then the arrival of Josh's excellent friend T prompted us to have a further bottle of Riesling. Then, no sooner had we unscrewed the cap of said Riesling than in strode the snazzily-bespectacled wine agent Sylvie Chameroy, with Blandine Chauchat, of Mas Foulaquier, and a truly dizzying array of biodynamic Pic-Saint Loup samples.

I start with good intentions and I wind up with red teeth.

big heart, small plates: la cave de l'insolite, 75011


La Cave de l'Insolite, my friend Michel's offbeat natural wine lair near Oberkampf, has just begun serving a tiny menu.


In proper insolite fashion, this was done with zero fanfare. Michel touched up the paintwork on the place, and threw in a few new tables. When I say 'new' in this context, it is a very relative term; regulars can rest assured that the tables are rustic and antique-seeming, and the place is still spacious, whimsically decorated, and soulful.


I passed through last Friday and lucked into a mini-tasting of the new menu with the gregarious Olivier Chabanis of Domaine des Agates, a 27ha-or-so organic estate in the center of the Rhone Valley that produces wines under the Côteaux du Tricastin AOC*.

wine list playlist: talulah gosh + old vine grenache



For variety's sake, a little viscious lighthearted song I've been digging all summer. If this song were a wine, it would be a 2006 Vin de Pays de l'Ardeche called "Briand," by Domaine du Mazel, that I drank the other night at Le Dirigeable. Brisk, tart, and deep as a bagel-cut. Neither the wine nor the song is particularly fresh, since by the standards of inexpensive south-central French VdP 2006 might as well be the mid-eighties. Actually there is probably a wider metaphor to be proposed here, about the similar lifespans of pop songs and simple table wines. But then every so often a strange leftfield classic comes along, like this wine, like this song, both of which feel as fresh as the day they were composed.  The wine is an old-vine Grenache and the song is Talulah Gosh.
